Chocolate is made by removing the shells from the cocoa beans, then roasting the remaining "nibs" and grinding them into cocoa liquor.
The cocoa liquor is then blended with sugar and other selected additive; like milk powder. Then the chocolate blends are refined until no grit can be felt on the tongue. The mix undergoes 10-12 hour process called "conching." In this process the chocolate is heated and stirred by giant paddles or by hand.
You might say that chocolate is one of a few food products that is improved with modern equipment and technology.
